Why Jersey Cows?
Jersey cows originated on the Island of Jersey in the British Channel Islands.
They are smaller than the typical Holstein dairy cow, standing about 4 feet tall and weighing around 900 pounds. But what they lack in size, they make up for in milk quality.
Jersey milk is known for:
•Higher butterfat content
•15–20% more protein
•15–18% more calcium
•10–12% more phosphorus
•Naturally occurring A2 protein
We never skim the cream or alter the milk before making our cheese. High-quality milk is the foundation of high-quality cheese.
In addition to superior milk, Jerseys are known for their gentle, friendly temperament — making them easier to care for and handle daily.


What Is A2 Milk?
Our Jersey herd naturally produces milk containing predominantly A2 beta-casein protein.

Some consumers prefer A2 milk because it is closer to the original form of dairy protein historically consumed before modern crossbreeding changed milk protein composition in many commercial herds.
We believe working with Jersey cows allows us to produce cheese that is:

The Legacy Behind Our Herd
Regenerative & Responsible Care
Our cows are our livelihood. Their wellbeing is our highest priority.
From spring through fall, our herd grazes on pasture.
During other seasons, they are fed carefully formulated rations developed with guidance from a PhD dairy nutritionist.
Their diets include hay, grains, protein sources, and essential vitamins and minerals to support optimal health.
We provide:
•Clean, dry bedding year-round
•Fresh food and water at all times
•Spacious corrals
•Straw-bedded calf hutches
•Warm nursery care for young calves in winter
Each cow is monitored at every milking.
When a cow becomes ill, we treat her promptly and compassionately. We do not use preventative antibiotics.
If antibiotics are necessary for treatment, that cow is removed from milk production until testing confirms her milk is antibiotic-free.
We do not use growth hormones (rBGH or rBST).

The Standard Behind Our Milk
What Does “Grade A Dairy” Mean?
Evans Dairy operates as a Grade A dairy.
Grade A designation means:
•Regular facility inspections (minimum four times per year)
•Strict sanitation standards
•Low bacterial counts
•Clean milking environments
•Proper milk handling protocols
•All of our raw milk cheeses are aged a minimum of 60 days in accordance with FDA regulations.
Aging reduces moisture, increases acidity, and allows beneficial cultures to develop while reducing harmful pathogens.
Time, care, and traditional methods are part of our process.
